Christmas Biscuits Recipe
Christmas is just around the corner and as ever it brings with it the usual underlying panic of preparations. Presents are bought and hidden, and Christmas treats are stockpiled away. In the panic of Christmas, it can all seem a little overwhelming and a little as though it is more effort than it is worth. So amongst the panic and preparations, it’s good to take some time out to spend the afternoon getting into the spirit. Whether you have kids or not here’s the perfect stress-free recipe for you to while away an afternoon getting into the Christmas spirit:
Christmas Biscuits
Ingredients:
For the biscuits –
100g butter, at room temperature
100g caster sugar
1 free-range egg
225g plain flour
50g Cocoa Powder
1 tsp vanilla extract
To decorate –
400g icing sugar
3 tbsp water
Food colourings and sprinkles of choice
Method:
- Preheat the oven to 190C/375F/Gas 5
- Cream the butter and sugar together until light and fluffy
- Beat the egg and vanilla extract together and then add a little at a time until combined
- Sift together the flour and cocoa powder
- Stir in the flour mix until the mixture becomes a dough
- Roll the dough out on a lightly floured work surface to a thickness of 1cm
- Use a biscuit cutter – any shape you fancy – and cut out as many shapes as you can, re-rolling when required
- Bake the biscuits for 8-10 minutes, or until pale golden-brown
- Once baked leave to cool
- For the icing, add your water into your icing, a spoonful at a time until you get a smooth, slightly runny icing. Colour as required and pipe onto your biscuits. Alternatively, you can spread the icing over with a knife or the back of a teaspoon
- Decorate as desired
- Eat!
